lentil sloppy joes

Number of Servings: 4

Ingredients

    1tbl olive oil
    1/2 onion diced
    1 clove garlic diced
    1c lentils
    2c chicken broth
    1tbl yellow mustard
    1tbl ketchup
    1tbl maple syrup
    1tbl soy sauce
    1tbl cumin
    1tbl chili powder
    salt and pepper to taste

Directions

Heat olive oil on medium heat. When hot add onions and garlic, saute 4 min or so. Add lentils and broth. Add the rest of the ingredients, bring to boil, simmer until done (20 min or so). Add more broth if the lentils dry out.

  • With chicken broth in this, it should not be tagged as a vegetarian meal. I am going to try it, substituting vegetable broth and adding some finely chopped carrots to the onions and garlic. - 7/25/11
