Honey Curry Chicken

Ingredients

    6 tbsp honey
    2 tbsp margarine (optional)
    1 tbsp yellow mustard
    1 tbsp curry powder

Directions

Melt honey and butter (if desired) in microwave for 40 seconds. Remove and add mustard and curry powder, mix well. Line a small baking pan with tinfoil and place chicken inside. Pour sauce over chicken breasts. Cook at 350 degrees for 60 minutes, flipping chicken halfway through. Serve over rice.

  • A friend shared this recipe with me years and years ago, its a go-to meal when we are in a hurry! I usually add a dash of cayenne pepper too.
    We love it, and more importantly, so do the KIDS!

  • I made this with chicken thighs (I recalculated nutrition) and it still fit easily into my plan. This is really easy to make and could therefore be a staple in our house. Even one of the kids liked it! - 3/29/07
