Introduction

very filling.great for any meal very filling.great for any meal
Number of Servings: 4

Ingredients

    2 cups egg beaters
    2 cups fresh spinich chopped
    1/2 cup onion
    1/2 cup chopped red bell pepper
    1 cup chopped mushrooms
    1 cup broccoli florets chopped
    1 tbsp. olive oil
    1 tbsp smart balance light
    2 ounces light chedder cheese(I like cabot 50% light)

Directions

heat olive oil and smart balance over med. heat add all veggies cook until just tender about 5 min. add egg beaters and cheese.Cook until eggs are set and cheese is melted.
