2 1/2 ounces fresh asparagus spears
4 ounces shrimp cooked medium, thawed if frozen and drained.
3/4 teaspoon lemon juice
1 tablespoon Kraft Fat Free salad dressing
1 tablespoon green onions thinly sliced
1/4 tomato, cut into wedges
1 1/2 teaspoons parsley chopped (Optional)
2. Meanwhile, in a medium bowl, sprinkle shrimp with lemon juice. Let stand 2 minutes; drain well.
Add the salad dressing and green onions. Chill for 20 minutes.
3. To assemble the salad, line a bowl with lettuce. Arrange the asparagus in a fan shape. Spoon shrimp mixture over base of asparagus. Garnish with tomato wedges, lemon and parsley.
