Introduction

These low calorie and fat free pumpkins will be a staple in your Sparks diet plan. They taste really good - makes 12 muffins. These low calorie and fat free pumpkins will be a staple in your Sparks diet plan. They taste really good - makes 12 muffins.
Number of Servings: 12

Ingredients

    2/3 cup dry powdered milk
    6 Tbsp flour (I use rice flour mix)
    1 tsp. baking soda
    1 tsp. pumpkin pie spice
    1 tsp. cinnamon
    1/2 cup grated carrots
    2 eggs
    1 cup canned pumpkin
    12 tsp Splenda
    1 tsp. granulated sugar
    1 tsp. vanilla
    4 Tbsp raisins (not packed)

Directions

Combine dry ingredients. Mix other ingredients and fold into dry mixture. Mix well. Spray muffin tins with Pam or use paper cups. Bake 350 degrees to 20 minutes. Makes 12 muffins.

    I use this recipe too! Its very good, and fits quite well into any plan. Being fat free, the muffins do tend to toughen as they sit, but that's to be expected. - 8/12/09
