Stuffed Peppers

Introduction

I have a large family, so this recipe is perfect for the 9 of us, but you may want to cut it in half. The peppers I use are huge and should serve 2, but my husband and boys can eat a whole stuffed pepper themselves! Ingredients

    7 large green bell peppers
    2-1/4 lbs lean ground beef
    1/2 cup chopped onion
    1/2 cut chopped green pepper (from tops)
    1 tsp chili powder
    1 tsp worcestershire sauce
    1 bag Success brown rice or 3 cups cooked brown rice
    2 cans (8 oz each) tomato sauce
    1 cup shredded cheddar cheese

Directions

Remove tops from green peppers and chop enough of them to make 1/2 cup. (You can chop the rest and freeze for a later use). Remove seeds and membranes. Add the cleaned green peppers to a large pot of boiling salted water and cook for 3 - 5 minutes. Remove and drain. Meanwhile, brown the ground beef, chopped peppers and onions until browned. Drain and add chili powder, worcestershire sauce, cooked rice and tomato sauce. Stir to combine well. Add 1/2 cup of the cheddar cheese and stir well. Invert peppers and fill with the meat mixture (about 1 cup per pepper). Bake at 325 for 45 minutes. Top with remaining shredded cheddar cheese and let sit to melt cheese. Serves 14 (1/2 stuffed pepper each).
