Vegan Silken Dijonaise Dressing

Introduction

Ingredients

    1 package silken tofu, the refrigerated works best.
    3 tbsp vinegar (apple cider or brown rice is best)
    3 tbsp grapeseed (or avocado or almond) oil
    2 tbsp maple syrup or agave
    1/4 to 1/2 tsp mustard powder
    salt, pepper, additional herbs to taste (i usually put in a few tablespoons of horseradish for some kick)

Directions

Blend all ingredients in a blender and chill for at least 1/2 hour. This recipe makes a lot and only keeps for three or four days. I usually half the recipe or make it for potato salad.
