1/3 cup Splenda 3 Tbsp Minute tapioca pinch of salt 3 cups 1% Milk 1 large egg 1.5 tsp vanilla
In large heavy saucepan whisk together splenda, tapioca, salt, milk and egg. Let stand 5 minutes. Slowly bring to a boil over medium heat stiring constantly until mixture comes to a full boil.(about 17 minites) Remove from heat and stir in vanilla. Let cool 20 minutes stiring twice. Pudding thickens as it cools. Stir pudding and spoon into dishes. Makes 6 servings.
