Sour Cream Spice Cake

Introduction

Nutritional info is for version made with no egg yolks. The caloric content could be reduced by substituting spoonable Brown Sugar Twin, but I didn't happen to have any around! Number of Servings: 24

Ingredients

    1 cup brown sugar
    12 pkg sugar twin (12 g)
    1/4 cup butter
    1/4 cup applesauce
    5 egg whites
    1 teaspoon ground whole cloves
    2 cups sifted flour
    1/4 teaspoon Salt
    1 teaspoon Soda
    1 teaspoon Allspice
    1 cup fat free sour cream
    2 teaspoons cinnamon

Directions

Beat 3 egg whites until stiff. Set aside. Preheat oven to 325F. Grease and flour cake pan. Tube pan works great, as does a rectangular pan.

Cream sugar & butter, add sugar twin. Add 2 egg whites or all the yolks. Add allspice. Beat well. Sift flour with salt, remaining spices and soda. Add alternately with sour cream to creamed mixture. Fold in stiffly beaten egg whites.

Pour into greased & floured tube pan. Bake at 325F for 35mins to 1 hour (tube pan takes longer than flat), or until it tests done. Very yummy. Serves 24.
