Easy Chicken and Wild RIce Bake

Ingredients

1 6 oz. box Unlce Ben's wild rice--nutrition based on the original recipe but can use other flavors--roasted garlic flavor great too!
3- 4 oz chicken breasts--no bone or skin (can be frozen)
2 cups of water
parlsey (optional)
Directions
1. Preheat oven to 350
2. In a roasting pan with lid, add box of uncooked rice. Stir in 2 cups of water and 3/4 of seasoning packet.
3. Place chicken on top of rice and sprinkle with remaining 1/4 of seasoning.
4. Put lid on pan and bake for 45 minutes or until chicken is done.**
5. Sprinkle with parsley and serve.
Makes 3 servings: 1-4 oz breast and 1 cup rice each.
**Frozen chicken breasts--1 hour
You can use 1 can of cream of mushroom or golden mushroom soup and 1 cup of water but this greatly increases the sodium intake (but the flavor is nice).
