Sunny Waldorf Salad

Introduction

Pretty green dressing, loaded with fruit. Tastes like a visit to California! Pretty green dressing, loaded with fruit. Tastes like a visit to California!

Ingredients

    3 medium-sized apples, chopped
    2 navel oranges, sectioned
    1 stalk celery, minced
    1/4 cup raisins
    1 cup toasted cashew pieces
    1 cup yogurt
    1/2 tsp. lemon rind
    2 Tbsp. lemon juice
    1 ripe avocado
    1 or 2 Tbsp. honey

Directions

Combine apples, oranges, celery, and raisins. Plop yogurt, lemon rind, lemon juice, avocado, and honey into blender and blend well. Pour over apple mixture and mix well. Top with toasted cashews.
