Ingredients

    2 tsp. olive oil
    8 oz. andouille sausage or kielbasa sliced 1/4 inch thick
    1 med yellow onion sliced thin
    1/2 cup white wine
    1 (14.5oz)can low salt chicken broth
    12 saffron threads crumbled
    1 cup long grain white rice
    3/4 lb or more med shrimp, peeled, deveined
    1/3 cup frozen peas
    1/2 tsp salt
    1/2 tsp pepper
    4 springs fresh cilantro)optional

Directions

Heat oil in wok or large saucepan over med -high heat. Add sausage and brown on both sides about 5 minutes. Reduce heat to medium and add onion, cook stirring occasionally for 5 min. Discard all but 1 T fat if needed. Add white wine and cook 2 minutes. Add broth, saffron, rice, bring to boil-reduce heat, cover, simmer 15 minutes. Stir in shrimp and peas, cover, cook 5 more minutes, remove from heat season with salt and pepper.
