! package of jumbo shells
1 c. part skim ricotta
7 ozs extra firm tofu (1/2 block) mashed or pureed
1-2 cloves garlic
6 Tbs. grated Parmesan cheese
1 cup cauliflower (steamed and pureed)
1 cup zucchini pureed
1/2 tsp salt
1/2 black pepper
1/2 cup mozzarella cheese (optional)
Preheat oven to 350. Place one rack near middle of oven and place a cookie sheet on the rack below to cover drips from it bubbling over.
In one bowl mix one jar of spaghetti sauce with 1/2 c. each of pureed cauliflower and pureed zucchini. Pour 1/2 cup of sauce mixture in the bottom of 13x9 baking pan.
In another bowl mix ricotta, pureed tofu, garlic, parmesan and remaining pureed cauliflower and zucchini.
Fill each jumbo shell with about 2.5 tbsp of filling mix and place in a single layer in the baking dish.
Cover with remaining sauce and bake covered with foil for 40 minutes. If desired, sprinkle shredded mozzarella over dish and bake uncovered for last 10 minutes.
