Crockpot Chicken Corn chowder

Number of Servings: 8

Ingredients

    Leftover roasted chicken - approx 1/2 chicken
    1 onion - chopped
    2 stalks celery - sliced
    2 carrots - slices
    2 cups frozen corn
    1 can low fat cream of potato soup
    1 can low fat cream of chicken soup
    1/2 cup low fat evaporated milk

Directions

Add all incredients except evaporated milk to slow cooker. Cook on low 5 to 6 hours or until vegetables are tender. During the last 10 minutes, stir in the evaporated milk. Add salt and pepper to taste if desired.

** For a thicker soup, add 2 tbsp cornstarch to the evaporated milk prior to adding to soup.
