Confetti Penne Pasta

Number of Servings: 6

Ingredients

    12oz Whole Grain Penne Pasta
    5 Tbsp Olive oil
    1tbsp chopped garlic
    3/4 cup red bell pepper, diced
    3/4 cup celery, diced
    1 cup Fresh Mushrooms, sliced
    2 tsp lemon pepper
    2 cups broccoli florets, cut small and cooked
    1 lb cooked boneless skinless chicken breast, diced
    1 cup Swanson 99% fat free chicken broth


Directions

cook the penne according to package drain and set aside
In a large skillet, heat oil to med heat
Add garlic, red pepper, celery, mushrooms, and lemon pepper.
Cook until tender
add pasta, broccoli, chicken, and broth
toss to heat though

  • This was good, but I did two tablespoons of olive oil instead of 5 because I didn't have a lot of calories left for the day. I also added a lot of basil, but then I add that to most everything. Thanks for sharing! - 5/5/07
