Black Bean & Tuna salad.

Introduction

Black beans, corn and tuna salad, best served hot on toast. A good high protein high carb low fat item. Black beans, corn and tuna salad, best served hot on toast. A good high protein high carb low fat item.
Number of Servings: 4

Ingredients

    Black Beans low sodium
    Can of sweat corn
    Can of albacore in water
    1 bell pepper
    1/2 a onion.

Directions

Prepare beans and corn as indicated on can.

Sweat chopped onion and green pepper in skillet until onions start to clear.

Drain tuna and mix all ingredients in a bowl.

Can be eaten plain (which is what the nutrition information is for) but I prefer to serve over toast.

Makes 4 servings of 1.25 cups each.
