Black Bean and Corn Salad

Ingredients

    2 cups corn kernels
    1 540ml can black beans, drained
    1/2 red onion, chopped
    1 med. red pepper, chopped
    1/4 cup fresh cilantro, chopped
    1 garlic clove, minced
    1 tsp brown sugar, packed
    juice from 1/2 lime
    3 tbsp. olive oil
    3 tbsp. balsamic vinegar
    salt & pepper to taste

Directions

Mix all ingredients in a bowl. Refrigerate 30 minutes before serving.
