Spciy Orange Roughy

Ingredients

    Orange Roughy (fish), 16 oz
    Lemon Juice, 1 lemon yields
    Tomato 1 large whole (3" dia)
    Onions, raw, large
    Jalepeno, .5 pepper
    Garlic, 3 cloves

Directions

Pre-heat oven to 375. Spray a backing pan with non-stick spay.

Place fish in the pan

Use a food presser for Jalapeno, garlic and lemon juice. Pour over fish.

Slice tomatoes and onions, place over fish

Season with fresh herbs of choice

Cover with foil and bake for 20-25 min or until fish is flaky.

  • if you use 2 jalapeno peppers, a little more lemon juice and just a little more garlic this is even better. Instead of placing onion and tomato on fish to cook I blended it in with the jalapeno, garlic,and lemon juice. Came out spectacular. - 6/12/11
