Maa Cholian di Dal(Black Bean&Chick Pea Dal)

Introduction

This one of my favourite Punjabi Dals and is very filling,Tasty and healthy too.I use a pressure cookr to cook all my Dals as it saves Time and Fuel.However all these Dals taste better if cooked in a covered Degchi( Vessel)on a slow flame like it was done before the age of pressure cookers.I prefer to use Ghee(Clarified butter) but any Oil could be sustituted instead if preferred. Ingredients

    1cup Split Chick Peas(Chana Dal)
    0.5cup split Black Beans with shell(Urad Dal Chhilkeywaali)
    100gms.Shallots(Red Onions)finely chopped
    5flakes Garlic peeled and chopped fine
    2medium ripe Tomatoes chopped
    OR
    1tsp.Dried Unripe Mango Powder(Aamchoor)
    2tsps.Turmeric Powder
    3tsps.Red Chilli Powder
    3tsps.Kitchen King Masala
    2tsps.Coriander-Cumin Powder
    2tsps.Cumin Seeds(Jeera)
    10Cloves(Laung/Lavang)
    2tsps.Whole black Pepper Corns(Kali Miri/Kali Mirch)
    2Bay Leaves(Tamaal Patra/Tez Patta)

Directions

Soak the Dals for 10minutes and then pressure cook with chopped Tomatoes(if using)for 4-5 whistles.When pressure subsides mash to mix well.Add a little Water,1tsp.Turmeric Powder,Dried Unripe Mango Powder(if using)and Salt to taste and simmer on slow flame till heated through.
In a wok heat the Ghee and lower flame.Add Cumin Seeds,Cloves,Bay Leaves,Black Pepper Corns,and finely chopped Garlic Flakes.When these begin to change colour add the finely chopped Shallots and fry on low flame till golden.Add the remaining Turmeric Powder,Coriander-Cumin Powder,Red Chilli Powder and Kitchen King Masala.Fry for 3-4 minutes till the Aromas waft up.Pour in the simmered Dal mixture and stir well and heat through.Garnish with chopped coriander Leaves and serve hot with Parathas and a Raita.

  • What is Kitchen King Masala?
    Are the black beans canned or fresh, dried?
    Can you use garlic cloves instead of flakes?
    What is Raita?
    Can this be cooked in a regular pan on an electric stove? I don't have access to a gas stove. - 1/3/10

    Yes this can be cooked on an electric stove---just keep an eye on the heat---low flame is best.Cloves and Flakes of Garlic are one and the same thing.Kitchen King is a type of Indian Spice Powder available in Indian stores---look for Everest or MDH Brands.You can find the recipe in my Spice Cook Boo
