Ingredients

    1/4 c. cornmeal,1/4 c. egg beaters,1/2 c. crushed pineapple(in its own juice), 1/3 c. nonfat powdered milk, 2 tsp. equal or splenda, 1 tsp. baking powder,and 1 tsp. vanilla extract.

Directions

preheat oven to 400 degrees, spray muffin pan, mix all ingredients and pour into 4 of the 6 muffin cups, add a little water to the 2 empty cups for baking. bake @ 400 for 8-10 min. or until golden brown.
