Soyrizo Enchiladas

Enchiladas made with vegan chorizo. Enchiladas made with vegan chorizo.Number of Servings: 12
Ingredients

12 corn tortillas
12 oz soyrizo (meatless chorizo)
1 can black beans, drained
1 1/2 cup enchilada sauce
1/2 cup cilantro, chopped
1 cup fat free cheddar cheese
12 Tbsp fat free sour cream
Directions
Spray baking dish with cooking spray then pour 1/2 cup sauce in bottom of dish so it is coated, set aside. Preheat oven to 350*.
Cook Soyrizo until warmed thoroughly, drain. In a large bowl mix together soyrizo, beans, cilantro, and 1/2 cup cheese. Fill tortillas with mixture & roll tightly. Place in baking dish seam side down. Once all tortillas are filled pour remaining sauce over enchiladas then sprinkle with remaining cheese. Bake for 15-20 min or until warmed through & cheese is melted. Top each with 1Tbsp sour cream & serve.
