Beef Corncake

Ingredients

1 lb lean ground beef
1 cup flour
1 cup cornmeal
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 egg
1/4 cup oil
1 Tbsp sugar
1 - 14 oz can cream corn
1 medium onion, thinly sliced
1 cup skim milk
1/2 cup grated cheddar cheese
Directions
1. Cook ground beef and onion over medium high heat until no longer pink.
2. Combine the next 5 ingredients in a mixing bowl. Make a well in the centre.
3. In a separate bowl beat together the next 3 ingredients, pour into well. Add cream corn and milk, mix well.
4. Spread evenly into a greased 9 x 13 pan, sprinkle top with cheese.
5. Bake, uncovered, for about 45 minutes in 350 F oven.
Makes 8 servings.
