Orange Salmon Packets

Ingredients

1/4 cup plain yogurt (non-fat)
2 tblsp mayonnaise (low-fat)
1/4 tsp orange extract
1 tblsp Splenda
1 tblsp lemon juice
2 small scallions, minced
1 tblsp fresh parsely, minced
1 pound salmon fillets
Directions
1. Preheat oven to 425F.
2. Combine all ingredients except the salmon together in a bowl and set aside.
3. Remove skin (if on).
4. Tear 4 large square of heavy-duty aluminum foil. Place each piece of salmon in the center of the square and spoon 2 tbslp of the sauce over it. Fold the foil up over the salmon, bringing the edges together and roll the edges to make a tight seal. Roll up each end.
5. When all your salmon fillets are snug in ther own little packets, bake them for 15 minutes.
**You can put them in a roasting pan or cookie sheet if you are afraid they will leak**
6. Place on individual serving plates, cut open and serve. If there is any sauce left over, serve on the side.
**These go really good with aspargus.**
