No Bake Mexican Casserole

Ingredients

1 packet of taco seasoning
2 cups hot water
1 box of macaroni & cheese (do not make as directed)
1 cup salsa
1 can whole kernal corn, drained
1 pound lean ground turkey breast
1/2 cup fat free sour cream
Directions
Cook ground turkey until brown
In a 2 quart microwavable bowl, mix taco seasoning, hot water, mac and cheese, salsa, corn and ground turkey and the dry cheese mixture
Cover and cook in microwave for 8 min and than mix
cover and continue cooking for 6 min
stir in sour cream, cover and let sit for 2-3 min before serving
This dish serves 6

I only gave it a 3 because like a few other people the pastta just didnt cook correctly. first it was undercooked.. and now its kind of cooked and sticky and weird. not pleasant. However I think if I cook the macoroni seperatley on the stove and then mix at the end it has potential to be awesome - 12/17/09

This was FANTASTIC!!!!! I asked my husband to make it and he wasn't too excited about it. He ended up LOVING it!!!!!! As he was devouring it he actually said, "There's no way that this is healthy!" We used reduced-sodium taco seasoning to help a little with salt intake. Can't wait for leftovers! - 7/7/09

This was fabulous! The kids gobbled it up - it felt like cheating, without the guilt. Not the MOST healthful of dinners, but I like a previous rater's idea of adding greens and tomatoes (didn't have any tonight).

I made this on the stove top and it was so quick and easy! I only used half the packet of taco seasoning, and next time will use Chef Meg's substitution spices for it (didn't have any on hand, need groceries lol!). I think next time I'll add a bit more onion and a few more veggies. Will make again! - 11/30/10

This is a VERY GOOD dish! The kind that keeps its blasting taste even after the first bite and doesn't get boring. If you don't like onions and what not, do not add the salsa. My boyfriend's and my list of recipe's is very small. This is definitely one for the recipe book! Thank you DietPrincess! - 4/21/10

Yum! :) Bigger portions than I expected, and very filling. I think this may be a new comfort food for me. lol... I added black beans, and just cooked it in the same pot as I cooked the meat - less dishes. (also used 93% lean ground beef) Unless feeding a family, plan on leftovers. lol... :) thx! - 6/15/09

Talk about comfort food...this is sooo yummy! The only changes I made were to add some diced bellpepper and onion to the meat as it was cooking. I also just used half the taco seasoning pkt to reduce the sodium. Make this!!! You wont regret it!! I also added a can of rinsed black beans! :)

i made this last night and i doctored it up a bit - i did not use meat and added a can of drained black beans. i added some other veggies and left out the taco seasoning. overall i would make it again, except i wld play with it to find the right mix for my taste. it did get sickening after awhile. - 8/26/10

used veggie crumbles instead of turkey, ff yogurt instead of sour cream, added black beans, diced tomatoes, sliced black olives, and topped it with low fat cheddar. passed the hubby test, but next time we're adding baked chips. very goopy on its own, even after doubling cooking time. no curb appeal! - 6/19/09
