Broccoli and Cheese Quiche - Crustless

Number of Servings: 6

Ingredients

    6 large Eggs
    3/4 C Milk (1% or skim)
    1 tsp minced garlic (or about 2 cloves)
    dash of salt
    1/2 tsp pepper
    1 part skim mozzarella string cheese
    2 Tbspn Parmesan Cheese
    3/4 tsp Spicy Mustard

Directions

Makes 6 slices
Add all wet ingredients and spices into mixing bowl and whisk together.
Add 1/2 T parmesan to mixture and save the rest.
Cut mozzarella string cheese into thin coins or cubes and add to egg mixture.
Chop broccoli or separate into small pieces.
Spray or grease a 9 inch glass or other pie plate.
Pour egg mixture into greased pie plate.
Arrange Broccoli on top of egg mixture evenly.
Sprinkle remaining parmesan over top.
Bake 350 degrees for 35-40 minutes or until eggs get puffy and slightly browned and a knife blade inserted comes out clean.
