Eggplant, Zucchini, Chickpeas and Feta

Introduction

This is a nice Mediterranean style dish of vegetables with chickpeas and feta cheese. I like to eat it with fresh spinach, while my husband prefers to eat it with pasta.

For variety, you can also add some different vegetables such as tomatoes and peppers to the dish. Fresh herbs instead of dried can also enhance the taste.

Number of Servings: 4

Ingredients

    1 Eggplant, chopped
    2 Zucchini, chopped
    1 Tbsp Extra Virgin Olive Oil
    2 Tbsp Lemon juice
    1 Tbsp dried oregano
    2 Tbsp dried basil
    1/2 tsp salt
    pepper to taste
    1 can garbanzo beans (chickpeas), drained and rinsed
    100 g feta, crumbled

Directions

1. Place chopped eggplant and zucchini in roasting pan, add olive oil, lemon juice, oregano, basil, salt and pepper.
2. Roast vegetables until nicely browned.
3. Add chickpeas and feta, toss to mix.

Makes about 4 one-cup servings. Can be served on a bed of spinach or lettuce if desired.

  • I didnt measure out the lemon juice, though i dont think i put too much in. I think i will leave the lemon out completely next time and make sure i get all the zuchinni in. - 6/24/10

  • I think I'll try this tonight for dinner alongside whole wheat pasta. Like the previous viewer, I'll likely sub parm cheese for the feta, but it sounds very flavorful! - 2/22/10

  • I loved the different veggies and that they were roasted. The amount of feta was too much for me. I will try this again but add more veggies and less feta or better some parmesan cheese.
