Introduction

Number of Servings: 6

Ingredients

    8 oz rice sticks
    2 T fish sauce
    2 T low-sodium soy sauce
    2 T brown sugar
    1/4 t crushed red pepper, or more to taste
    2 t vegetable oil
    1 egg, lightly beaten
    1 lb frozen shrimp
    4 garlic cloves, minced
    4 green onions, coarsely onions
    2 C fresh bean sprouts
    2 T chopped peanuts
    lime wedges
    fresh chopped cilantro

Directions

Bring large pot pf water to boil. Remove from heat and add rice, stirring to separate. Soak 5-7 minutes, or until tender; then drain and rinse in cold water. Set aside.

Mix fish sauce, soy sauce, sugar and crushed red pepper in small bowl until sugar dissolves. Set aside.

Heat 1 tsp oil in wok over med-high heat. Add egg, and cook quickly, until opaque. Move to side. Add frozen shrimp to wok, cook 5-7 minutes until just cooked through. Drain excess liquid. Add garlic, stir fry 1 minute.

Add remaining oil, and then noodles. stir fry quickly until softened, about 2 minutes. Add sauce mixture. Coat noodles evenly, stirring until heated through. Stir in green onions, and bean sprouts and cook 2 more minutes. Mound on serving platter, and garnish with peanuts, lime wedges and cilantro.

Of course, you could substitute the shrimp with chicken, if you're family prefers. :) It's yummy either way.

Makes about 6 - 1 1/3 cup servings.

    I just made this recipe and LOVED it!The following are adjustments I made: I used chicken and substituted hoisin sauce for the fish sauce,used asian frozen vegetable mix and frozen broccoli for the vegetables, sesame oil and egg whites. thank you!! - 9/18/11

    I googled rice sticks as I never heard of that and it says it is rice sticks noodle. The seasoning looks delicious and I will try it but I will use half the noodles and replace the other half with bean sprouts to give it the crunch I love and to save on carbs and calories.     Excellent recipe! I did double the sauce recipe and I cut my shrimp in half cross wise because they were bigger shrimp and I wanted bite sized pieces. I also added 1t fresh ginger from a jar. Hubby loved it. He said it is a keeper and I will be making this again and often. - 8/17/11

    This had a really nice flavor, but I thought there was only barely enough sauce (the noodles were a little dry). Next time I will probably make more sauce or water it down with the water for cooking the rice noodles... to keep the sodium down. Thank you for the recipe--it's quite tasty! - 1/16/10

    This is a delicious healthy recipe. I love Pad Thai but never had made it myself before trying this recipe. It is easy and delicious - better than in my local Thai restaurant. I added chopped fresh ginger with the garlic - Yummy!! - 7/13/09

    The best dish i've ate since i been on my diet. If you miss dishes like pad woon sen or pad thai you should definitely fix this. It will be one of my go tos from now on. The 3 slight changes i made: used chicken (don't like shrimp). Used 3 cups bean sprouts (like them) and used stir fried Onions. - 1/27/13

    We LOVE this! Per other comments I doubled the sauce. I didn't use the egg or peanuts. I changed this for our taste by adding 1" fresh minced ginger,brocolli, red cabbage and celery. I used agave instead of brown sugar and olive and sesame oil. I used leftover rice instead of rice noodles. - 2/20/13

  • Made this for my husband and I and we loved it! I didn't have enough shrimp so I added some chicken with the shrimp. I also added two tablespoons of chicken stock to give it a little more moisture and had brown rice pad thai noodles. It was an easy dish to make and so delish! - 4/16/14

  • Tastes mostly like pad thai. It appears the nutrition facts are off, the maifun rice sticks I bought said 2 oz is a serving at 200 cal per serving, 4 servs x 200 = 800 /6 servs in this recipe = 133 cal from the rice noodles, the break down says 41. Maybe the author used a different type of noodle? - 2/9/14

  • My son and I used fresh veggies, zuchinni,peppers and such to bulk it up on the veggie side. The ginger was a good add on and the tip to double the sauce was excellent.   • I like this recipe a lot!!! I like it very spicy and I wanted to lower the carbs so I did the following: Used Dreamfield's linguini instead of rice noodles You could use Japanese shirataki linguini for super low carb recipe. I added 1 tsp of Grace Jamaican Jerk paste to give it some real heat. - 8/15/13

  • This was really good! I finished it with a few drops of sesame oil, and added some red pepper flakes at the table. Hubs, who won't take me out for Thai because he says he doesn't like it ate it up...although he wanted Parmesan on it...lol! Will probably use less noodles and more shrimp next time: - 8/14/13

  • This was delish! I did add some fresh ginger & I doubled the sauce mixture. And I think next time I'll omit the cilantro....I just didn't appreciate the cilantro taste in this otherwise awesome dish! Definitely a keeper!!! - 8/14/13

  • This was very, very good. We made it vegetarian and omitted the egg and lime wedges. Super tasty, fiance and I loved it, and easy/inexpensive to make (without the shrimp.) You can get the fish sauce and rice noodles at asian stores. Would definitely make again. - 3/22/11
