Lemony Spinach Fennel Pasta

Introduction

This pasta recipe is pretty simple, just throw the sauce together and let it cook! Spinach and fennel fit wonderfully together and don't need many other flavors to make a really tasty dish. This pasta recipe is pretty simple, just throw the sauce together and let it cook! Spinach and fennel fit wonderfully together and don't need many other flavors to make a really tasty dish.
Number of Servings: 3

Ingredients

    1 1/2 cups spinach, frozen
    1 fennel bulb
    2 tbsp olive oil
    1 onion, chopped
    2 cloves garlic, minced
    1/2 tsp salt
    juice of one lemon
    Barilla penne pasta,
    grated Parmesan

Directions

1. Heat oil in skillet; add chopped onion and cook for 3-4 minutes or until translucent. Add garlic and cook another 30 seconds.


2. Chop fennel and add to the skillet. Adding water to the skillet will help the fennel become tender. Meanwhile, begin preparing the pasta according to package instructions.



3. When the fennel is tender, add spinach to the pan and heat thoroughly. Season with salt and pepper, nutmeg if desired. Add lemon juice and heat thoroughly.



4. Serve over pasta, garnish with grated parmesan if desired. (If you are vegetarian, be careful - most authentic parmesan is made with animal rennet).



Makes 2 large servings or 3 medium. This also depends on your preferred pasta to veggie ratio.
