Sugar Free Blueberry Cobbler

Introduction

Number of Servings: 12

Ingredients

    4 Tbsp. Butter
    3/4 Cup Milk
    1 Cup Self-Rising Flour
    2 Cups Splenda
    1 1/2 Pint Blueberries

Directions

Preheat oven to 350 degrees. Place butter into a medium casserole dish and put into the oven to melt. Mix blueberries and one cup splenda. Remove casserole dish from the oven once the butter is melted, add blueberry/splenda mixture, and stir. Combine flour and remaining splenda, mix in milk, and blend until smooth. Pour over the blueberries and bake at 350 degrees for 30 minutes or until the crust is firm and golden.

Note: This recipe works well with most any fruit. 1 tsp. of vanilla can be added to the crust mixture if desired.

Makes 12 1 cup servings.

  • The calories etc are wrong. I re-entered the recipe in my recipe calculator and came up with 6 servings at 195 calories, 8.2 fat, 37.2 carbs, and 2.5 fiber. It could be due to the high calorie count of a pint of blueberries. I used 3 cups for my calculations. - 8/16/08

  • It's great but there's something seriously wrong with the nutritional info on this recipe and the servings too! There's no way this makes 12 1 cup servings! I'd say it's 6 servings based on what I got out of it. Nor is there any way there are that many calories or carbs in this recipe. - 6/8/07
