Penny's Garlic Cheese Meatballs

Introduction

These are absolute favorites of my kids. They are so full of garlic and cheese that they are very fragrant. These are much better when marinated in sauce for several hours before eating them. This recipe can easily be reduced or increased. These are absolute favorites of my kids. They are so full of garlic and cheese that they are very fragrant. Number of Servings: 62

Ingredients

    3 pounds lean ground beef (nutritional info uses 80/20 for calculation)
    3 eggs
    3 tablespoons dried parsley
    lots of fresh pressed garlic - a whole bulb is what I used for 3 pounds but you can use more or less
    1 oz each of grated parmesan, romano and asiago cheese. (You can choose to use only one choose but make it asiago if you do)
    2 slices of toasted bread, made into bread crumbs
    salt
    pepper

Directions

Pre-heat the oven to 350 degrees. Combine all ingredients in a large bowl; mix with hands. Form into balls and place onto cookie sheets. (I make them about two inches but you can choose the size) Bake in the oven for approximately 20 - 25 minutes, depending on the size of the meatball.

Makes about 62 two inch meatballs.

Note: best if simmered in sauce for several hours before eating and particularly good in a crockpot

    The "per serving" is one meatball, with sauce, so you can choose to have as many as you'd like or as many as you want to spend calories on. I usually find that three to four meatballs with a little bit of pasta is VERY filling.
