Southwest Pasta Salad

Ingredients

    1 - 8oz box of Wheat Pasta - Eden Foods small vegetable shells, organic (or equivalent - Image shows it made with multigrain penne)
    1 - 15 oz can Publix GreenWise Organic Whole Kernel Corn (or equivalent)
    1 - 15 oz can of Publix GreenWise Organic Black Beans (or equivalent)
    1 cup Salsa (organic)
    I cup shredded, low fat cheddar cheese
    1 cup diced organic green pepper (bell pepper)
    Optional: add garlic powder, black pepper, or cayenne pepper to taste (in any combination)


Directions

Prepare pasta according to package directions. Drain, rinse and put into large bowl.

Drain and reserve the liquids from the canned corn and black beans.

Combine all ingredients with the cooked pasta in a large bowl and mix well. Add small amounts of the reserved canned liquids if desired.

Serve immediately or cover and refrigerate. Serve cool or at room temperature. Serves 8 as main course, or up to 16 as side dish.

I'd hold the cheddar cheese and add a dressing made of fresh lime juice, a scant bit of olive oil, a dash of cayenne, thinky sliced/chopped jelapeno, and a green onion sliced thin.

Incredible!
I made this for a fourth of july party this weekend. Instead of green peppers, I added a can of mild green chilis. I also added a can of diced tomatoes because when making it before, it seemed just a little dry. This combo was PERFECT and everyone raved about this salad!

Very good - we used pepperjack cheese instead of the lowfat cheddar and a bit of extra lime juice. People who find recipes like this bland, maybe change your salsa. I've found when a recipe calls for a good quantity of salsa, it pays to pay a little extra for a really good flavorful brand.

It was a great recipe, my only complaint to speak of, was there wasn't an amount each serving was. The recipe made 9 1/2 cup servings, so I wasn't sure if each serving was 3/4 of a cup or what, so for those of us really measuring everything, that is very important. But other wise it was a hit.

I kept the cheese, added some chicken that I drizzeled with 1/2 of a fresh lime then I put a med/large fresh tomatoe and can of mild green chilies in the blender gave it a whirl to make it good and juicy and poored it over . It was good.

There is a recipes just like this in the Instant Pasta salad I make all the time. You buy the Chipolte Ranch pasta salad and you can adda anything (chicken, corn, cheese, beans, etc) My moms fave way is with crushed doritos... just to mention I make mine with light sour cream, really cuts the cal.

This is great! i've tried it adding fresh diced tomatoes, a little chicken, spinach, green onion, thinnly sliced celery, bell pepper all diced up all work fine. I totally leave out the cilantro. To me it tastes and smells awful (like dirty socks) and I cannot eat things with that as an ingredient

This is a great start to a healthy pasta salad. You could add chunks of chicken or shrimp. You could also serve spaghetti sauce over this. Add some more seasonings to taste! Great recipe to take to a party or have as a small side!

To cut back on the soduim, I rinsed my canned goods fairly well. I used Eden brand beans b/c they are the lowest in sodium I was able to find. Also, I used a few dabs of Plain-No Fat-Yogurt to give a sour cream affect and give the salad some moisture. Cilantro and a squeeze of lime juice made it A+!

Love this dish. Great as a side or meatless main dish. I skipped the cheese to reduce the calories. I also used frozen corn and no salt added beans so most of the sodium comes from the salsa. Homemade fresh salsa would help reduce sodium even more. May add parmesean cheese next time.

Sounds like a good base I will tweak. I don't use canned veggies (packing material not good for hubby who has pancratic cancer) so I will prepare fresh corn, black beans & salsa to use in it. Sounds good for a light summer meal.

Very versatile, like so many SP recipes. I use low or no-sodium beans and corn; add finely chopped red onion, diced tomatoes and (for some moisture and more zip) drizzle 2-3 Tbsp. of fat-free Italian dressing. Add meat for main dish or serve as is for side dish. Top wih finely sliced green onion.

Worked beautifully for lunch today with all sorts of substitutions -- GF pasta spirals, navy beans, frozen corn, scallions instead of peppers, homemade salsa... adding in green chiles would have been great! It was a wee bit bland for some of the eaters, but a bit spicy for others.

I will definitely try this but I ALWAYS rinse my canned goods so I'll probably add a small amount of olive oil instead. I love pasta and beans together and veggies are always high on my list to add.
