Introduction

this would be good for vegan no animal at all. I hated the pre-made vegan jell.

Number of Servings: 6

Ingredients

    one can of pineapple chunks in juice
    on cup of blueberry juice*
    1/2 cup of small pearl tapioca (spelling on pkg)
    1/2 cup Splenda
    1/4 cup macadamia nuts


Directions

*the blueberry juice is from a can of pie fruit. I used the berries in muffins.
Soak the pearl tapioca in 2 cups of room temp. water overnight (as directed on package). Drain and rinse.
Combine the Juices and pearls in a pan on the stove-top and simmer 1 hour. As low temp. as you can make it. It should be clear and ready to add the Splenda (add more if you prefer). Mix throughly. Add pineapple and heat another 15 min. Add the Macadamia nuts before serving. Everything will be purple if you wait. But still taste great. Change out the fruit as you will. I think any addition would be great. Since there is no Milk or eggs it is more like a textured "gel".
