Number of Servings: 5


    1. 250 grams lean ground beef
    2. 1 onion, chopped.
    3. 1 clove garlic, chopped.
    4. 1 cup carrots, chopped.
    5. 1cup fresh spinach, chopped.
    6. 1/2 cup frozen peas.
    7. 1/2 cup chickpeas (canned)
    8. 1/4 tsp salt.
    9. 1/4 tsp pepper
    10. 1 cup beef or vegetable stock.
    11. 1/2 cup of water.
    12. 1 tsp olive oil.
    13. 2 tbs tomato paste.


1. in a large frying pan, heat the olive oil and fry the beef with the onion and garlic until browned.season with salt and pepper.
2. add the carrots, peas and chickpeas. stirr, then add the stock, water and tomato paste.
3. bring to a boil then reduce heat and simmer coverd for 20 minutes.
4. uncover, add the spinach and stir until it wilts. serve over rice.

makes 5 servings ( serving size is 1/2 cup)
