40 grams eggplant
70 grams light mozzarella
20 grams sliced tomatoe
0.5 fresh basil
0.3 olive oil.
seasoning (salt, pepper, italian spices)
Scoop out the meat and mash with seasoning.
Cut the mozzarella in rounds, as well as the tomatoe
Chopp the basil.
Now layer the tomatoe, mozzarella, eggplant, basil in layers.
Add some seasoning between the layers.
You can, if you like, mix a little olive oil with the mashed eggplant, or simply sprinkle a few drops over the top.
Bake in the oven for around 25 minutes, till mozzarella on top has melted and gone brown.
Serve as side dish for a barbeque.
Serve as side dish, cold.
