Introduction

My kids love this soup. We serve it with shredded cheese, sour cream, fresh cilantro, and tortilla chips. My kids love this soup. We serve it with shredded cheese, sour cream, fresh cilantro, and tortilla chips.

Ingredients

    2 boneless, skinless, chicken breasts
    2 cups fat free chicken broth
    1/2 cup cooked and drained black beans
    1/2 cup cooked and drained kidney beans
    1 cup frozen yellow corn
    2 tbsp chopped onion
    1/4 cup chopped green pepper
    1 cup salsa
    1 tsp ground cumin

Directions

Cut raw chicken into bite size chunks. Add everything to the crock pot. Cover and cook on low heat all day. When you get home, add boiling water to get the amount of broth you want.

Serve with bowls of low fat shredded cheddar, chopped fresh cilantro, fat free sour cream, and baked corn tortilla chips. We add these as garnish to the soup and crumble the chips into it like crackers.
