Lemon Tuna and Corn Pasta

Introduction

Number of Servings: 2

Ingredients

    * Whole Wheat Fusilli or Rotini 4 oz
    * Lemon juice, 2 tbsp
    * Garlic, 2 cloves minced
    * *Extra Virgin Olive Oil, 2 tbsp
    * Pepper, black, 1 tsp
    * Yellow Sweet Corn, Canned, 140 grams
    * Celery, raw, 3 stalk, small (5" long), chopped
    * Beans, cannellini 125 g
    *Tuna, Canned in Water, 160 grams, drained

Directions

1. Begin water for pasta.


2. Heat oil in saucepan. Add minced garlic and cook until beginning to brown. Remove from heat.


3. Add to garlic: lemon juice, tuna, corn, beans, celery and pepper. Stir to combine.


4. When pasta is nearly done, add about 2 to 3 tablespoons of pasta water to tuna mixture.


5. Combine pasta and vegetables to serve. Add more pepper if desired.
