Introduction

Great recipe for a family night or pot luck makes a lot. Actually it is just the two of us now but we love the leftovers. I adapted it from a community cookbook and think that it is a Greek dish. With the adaptations it went from over 800 calories per serving to just over 400.

Number of Servings: 12

Ingredients

    Pasta layer:
    1 lb elbow macaroni
    2 egg whites
    1/2 cup grated Parmesan cheese (divided - 1/2 for macaroni layer & 1/2 for white sauce)
    1/4 cup melted butter (divided - 1/2 for macaroni and 1/2 for white sauce)
    1/4 tsp nutmeg

    Meat Sauce:
    1 cup chopped onion
    2 tbsp olive oil
    12 oz. lean ground beef
    1/2 cup grated carrots
    1 cup tomato sauce
    1/2 cup red wine (optional)
    1/4 cup water
    salt
    pepper

    White Sauce:
    1/2 stick butter
    8 tbsp corn starch
    1 tsp salt
    3 cups 1% milk
    3 egg whites
    1/2 cup grated Parmesan cheese


Directions

It makes 12 servings in a 9x13 pan.

Cook macaroni as package directs, do not overcook.
Drain and put in a large bowl, then add egg whites, cheese, butter, and nutmeg. Toss well.

Spread half of the macaroni mixture in a 9x13 pan.
Cover with all of the meat sauce (see below) and the remaining macaroni.
Cover with the white sauce (see below).
Sprinkle with a bit of Parmesan cheese (optional)
Bake at 350 for 40 to 45 minutes or until golden.
Cool slightly and serve.

Meat sauce:
Saute onion in olive oil; add meat stirring until browned.
Add carrots, tomato sauce, wine, water, and seasonings. Salt and pepper to taste.
Simmer until thick, about 15 minutes.

White Sauce:
Melt butter over medium heat.
Stir in cornstarch and salt.
Slowly add milk, stirring constantly until the mixture begins to thicken. Add beaten egg whites and cheese stirring until thick enough to spread over macaroni.
