Summer Bean Salad

Introduction

This is a great side dish if you're making fish, but is filling enough to eat for a light and nutrient-filled lunch. This is a great side dish if you're making fish, but is filling enough to eat for a light and nutrient-filled lunch.
Number of Servings: 4

Ingredients

    16 oz of french-cut green beans
    16 oz can black eyed peas
    2 large ripe tomatoes, chopped
    1/2 cup chopped parsley
    4 entire scallions, chopped
    Juice of 2 lemons
    1 TBSP olive oil
    salt and pepper

Directions

Steam and drain green beans and allow them to cool. Drain and rinse peas. Combine ingredients and mix well. Serve chilled or warm.

Makes 4 1-cup servings.
