Introduction

I came up with this simple recipe because my husband loves pancakes, but if he doesn't get some protien in the morning he start to feel light headed before lunch time. He also loves peanut butter, so this was an easy, no-brainer. He also loves peanut butter, so this was an easy, no-brainer.
Number of Servings: 10

Ingredients

    1/2 cup chunky peanut butter
    2 cups of your favorite pancake mix
    2 1/2 cups water
    Cooking spray

    I used regular buttermilk pancake mix and regular peanut butter, (not the reduced fat or whole grain varieties) for the nutritional info. Adjust your totals as needed.

Directions

1. Measure out the peanut butter into a small bowl and heat in the microwave for about 20 seconds, until the peanut butter pours easily.

2. Combine the warmed paenut butter, pancake mix, egg and water in a large bowl and whisk to combine thouroughly. Add more water to make the batter to your liking.

3. Spray a hot gridle or pan with the cooking oil, spoon/pour the batter into 3-4" pancakes. Wait for the top to bubble and to loose the "wet" look. Flip and cook for another 30 seconds or so.

4. Serve with warmed syrup, applesauce, apple butter or your favorite topping. Noate: Any topping is not inclued in the nutritional information.

This recipe makes approximatley 30 pancakes- 3 per serving.

Tip: I like to pour the prepared batter into a measuring cup. It makes it easier to pour the batter into the pan and control the size of the pancake.
