Lunch Box CupCakes-with Icing

Ingredients

    Cupcakes:
    1 1/2 C Oatmeal
    2 1/4 C boiling water
    1 1/2 C Sugar
    1/2 C Margarine
    3 Eggs
    1 tsp Vanilla Extract
    1 1/2 C Flour
    1 1/2 tsp Baking Soda
    1 tsp salt
    1/4 C Baking Cocoa

    Icing:
    1 C Powdered Sugar
    2 C Shredded Coconut
    2 Tbsp Margarine
    1/2 C Skim Milk

Directions

Cupcakes:
Preheat oven to 350 degrees
Boil Water and pour over dry oatmeal. Stir and let set for 2 minutes. Add rest of ingredients and mix well. Pour into 24 cupcake tins and bake at 350 degrees for 13-15 minutes.

Icing:
In pan melt margarine; add milk and rest of ingredients. Mix overheat and boil for until thick. (Approximately 6-8 minutes)

Allow cupcakes to cool and add icing to top.
