Introduction

Ingredients

    4 1/2 c. flour
    1 tbsp salt
    1 c. water
    1/4 c. honey
    2 tsp yeast
    1 tablespoon sugar

Directions

Mix together honey and warm water. Dissolve yeast and let proof.

Mix together flour, salt. Mix in yeast mixture into flour until a dough is formed. Knead dough until smooth.

Portion dough into 12 equal sized portion and shape into bagel shape with a hole in the middle. Let rise for 30 minutes.

Meanwhile, bring a gallon of water to boil Add 1 tbsp of sugar and lower to a simmer. Boil bagels in batches of 3 ~ 4 (bagels will swell in water) for 7 minutes total, turning once. Drain and place on a well greased baking sheet.

Bake bagels for 30 minutes at 375F until golden brown.

Makes 1 dozen 3 1/2 inch diameter bagels.
