IntroductionTrying to come up with quick, healthy lunches with some spice with things I had on hand. Trying to come up with quick, healthy lunches with some spice with things I had on hand.
1 Ole High Fiber-Low Carb Extreme wellness tortilla
2 1/2 oz of turkey breast meat, (2-3 thin slices)
1 oz Cracker Barrel 2% milk sharp cheddar, shredded
1/4 cup (20 grams) Manns Broccoli Slaw, plain
1/2 cup (10 grams) Spring or Baby green salad mix
1/4 cup (30 grams) Vidalia onion, sliced very thin
1-2 Tablespoons Medium hot chunky salsa
1 teaspoon Nancy's Hot mustard (or other sweet-spicy mustard, similar to chinese mustard)
2-3 thin Roasted Red Pepper slices
1. Lay out the tortilla and spread the hot mustard and salsa evenly over all of it. Then put the slices of turkey on that and cover with a handful of broccoli slaw. Sprinkle the cheese evenly over this, so when it melts it will help hold all the veggies together. Cover that with the thinly sliced onion, and top with the greens.
2. Pressing firmly, roll the tortilla tightly and put the seam side down. Squish it a little to help it stay together and microwave for 2-3 minutes, checking every minute or so till the center feels warmed. Let sit for 3 minutes or so and enjoy while warm.
