Pork and Asparagus Stir Fry

Ingredients

3/4 lb of lean pork, trimmed of all fat and sliced thin
1 Tablespoon oil
1 Tablespoon fresh grated ginger root
2 cloves garlic, minced
1 medium onion chopped
1 lb asparagus, trimmed and cut in 2" long peices
1 jar Dole pineapple drained of juice
1/4 cup pineapple juice saved from jar
1/4 cup soy sauce
2 Tablespoons cornstarch
1 Tablespoon honey
Directions
Bring non stick skillet up to medium hot heat. Toss pork strips with oil. Add to hot pan. Stir frequently til it starts to brown. Lower heat slightly. Add ginger, garlic and onion and continue to cook until starting to soften and brown. Add asparagus and cook til tender crisp.
Add pineapple and heat back til hot. Mix all remaining ingredients in a small bowl and wisk til cornstarch is dissolved. Add to pan and continue to stir constantly til liquid thickens and entire dish is hot again. Serve over hot brown rice. Serves 3
