4 lbs red potatoes, baked w/ skin on 2 cups sour cream 1/4 cup mayo w/ olive oil 12 strips ready to eat bacon 4 scallions 2 T yellow mustard 1 cup shredded cheese
Scrub potatoes and bake in a 350 degree oven for 1 hour; while potatoes are cooking, finely chop scallions and bacon; in same bowl, add sour cream, mayo, mustard and cheese. When potatoes are done, let cool slightly, cut into cubes and toss with prepared dressing. Eat immediately or chill and serve. Makes at least 15 servings.
