Introduction

Crammed full of protein, I use this to replace brakfast or lunch. Some ingredients sound terrible, but you can't tell they are in there. Crammed full of protein, I use this to replace brakfast or lunch. Some ingredients sound terrible, but you can't tell they are in there.
Number of Servings: 16

Ingredients

    1/3 cup brown sugar
    1/3 cup splenda
    1/3 cup raw sugar
    1 egg
    1 cup garbanzo beans, mashed
    1 cup fat free cottage cheese
    1/2 teaspoon salt
    1 tsp vanilla
    2 tsp baking powder
    1 tsp baking soda
    2 tbsp ginger
    1 cup steel cut oats
    1 cup quinoa
    1 cup cauliflower
    ½ cup mushroom
    2 grapefruit
    2/3 cups flour
    2/3 cups spelt
    2/3 cups wheat gluten
    1/4 cup flaxseed
    1 cup dried cherry
    1 cup chocolate chips
    1 cup strawberries
    1 cup walnuts

Directions

Preheat Oven to 375 Degrees. Puree garbanzo beans.
Cook steel-cut oats and quinoa.
Mix sugars together. Add in egg, and mix thoroughly.
Add vanilla, salt, ginger, baking soda and baking powder and mix.
Mix in pureed beans, grapefruits, cottage cheese and ground flaxseed.
Add in the flours, steel-cut oats and quinoa Dough may be very viscous.
Add in dried cherries, strawberries, and walnuts.
Bake for approximately 40-60 minutes, in 2 9” cake pans. Makes 16 servings.

    I had trouble figuring out when to put in the cauliflower and the mushrooms. I find them a little expensive and labored for the result but that is just me. - 12/14/09
