Number of Servings: 8


    3 Medium Carrots, grated
    3 Medium Parsnips, grated
    1 Celery Stalk, chopped finely
    1 onion, chopped finely
    2 Tblspns chopped chives
    1 tblsp chopped fresh parsley
    1 tsp paprika
    dash ground pepper
    dash salt
    1/4 cup flour (probably won't use all)
    1 tblspn vegetable oil
    2 Weetabix biscuits (I use Oatibix instead)
    2 medium eggs


Mix all ingredients thoroughly (except oil and flour). Divide into 8 balls. Flatten each ball into a 1 inch (approx.) thick pancake and cover both sides with flour. Heat oil and shallow fry on both sides until deep brown colour. Pancakes will cook better on medium-low heat if you use a skillet and cover with a lid.
