GF/CF Mini Meatloaves

Introduction

Make this either as mini meatloaves in a muffin tin or as 1 large loaf. Did not account for salt & pepper or herbs in nutrition info as those are a matter of taste. Ingredients

    1 lb 96-97% lean ground sirloin
    1 tbsp extra light olive oil
    4 tbsps minced onion
    1/2 carrot, minced
    1 stalk celery, minced
    2 cloves garlic, minced
    1/4 c frozen chopped spinach, minced
    1/2 c cooked brown rice
    1 egg, beaten
    1 tbsp balsamic vinegar
    1-2 tbsps seasonings of choice: salt & pepper, herbs. spices such as cumin, red pepper, etc will change flavors but will be excellent.

Directions

Preheat oven to 350*. Over med heat, saute all veggies, seasoning with salt & pepper (just a pinch or 2). Cook until tender. While veggies are cooking, place ground beef in a mixing bowl and season with a few pinches of salt & pepper and optional herbs/spices. Add balsamic vinegar and mix with hands or potato masher. Add egg and mix. Add brown rice and mix. When veggies are done, remove from heat, let cool a few minutes. when not hot to touch, mix veggies into ground beef mixture. Using ice cream scoop, scoop meatloaves into muffin tin. Bake for 20 minutes, or until golden brown on top. Top each mini loaf with 1 tsp "GF/CF Mini Meatloaves Glaze" if desired. Makes 12 mini loaves. Great for make ahead meals as these freeze well. Simply let cool thoroughly before wrapping each individually with plastic wrap and placing in freezer bag for storage.
