GF/CF Creamy Mashed Potatoes

Introduction

Variations: add several cloves of garlic to potatoes while boiling and mash with potatoes; add herbs for garlic herbed potatoes; add Tofutti's "Better than Sour Cream" or Whole Soy & Co plain yogurt for tang. Ingredients

    6 medium russet potatoes
    4 tbsps Nucoa margarine (or another GF/CF margarine brand. Or Ghee)
    1/2 c chicken or vegetable stock
    salt & pepper to taste

Directions

Makes (4) 1/2 c servings

Peel & dice potatoes to uniform size. Place in pot and cover with water over high heat. Bring to boil and reduce heat to medium. Cook until tender but not mushy, approximately 15 minutes. Drain potatoes in colander and return to pot. Add margarine and stock and mash until preferred consistency. Season with salt & pepper and herbs, if desired. If using whole garlic cloves for garlic mashed potatoes, peel cloves and boil with potatoes. They will mash with the potatoes.
