Enchilada Polenta Pie using a Slow Cooker

Introduction

This is a recipe from my vegetarian slow cooker cookbook.

I love using my crockpot whenever possible, especially in the summertime!

I omitted the beans (15oz) and the black olives (2 T) because some members of my family are allergic to them. The cooking time IS factored in for the slow cooker.

Number of Servings: 4

Ingredients

    POLENTA
    2T EVOO
    1 sm yellow onion, minced
    1 1/4 C cornmeal
    1 tsp salt
    1 tsp chili powder
    4 C boiling water
    SALSA TOPPING
    2 1/2 C chunky salsa
    1 T chili powder
    1 1/2 C frozen corn, thawed
    1 (4 oz) can of diced green chiles
    2 T minced red onion
    2 T minced fresh cilantro (garnish)
    S&P to taste

Directions

1) Heat the EVOO in a small skillet over med heat. Add the onion, cover, and cook until soft. Approx 5 min.
2) Transfer the onion to a lightly oiled 4qt slow cooker.
Add the cornmeal, salt, and 1/2 tsp chili powder.
Whisk in the boiling water until well combined. Cover and cook on low for 6-8 hours.
3) In a large bowl, combine the rest of the ingredients.
4) About 30 minutes before serving, spread the salsa mix over the top of the polenta. Cover and cook on low until the salsa mix is hot.
5) Serve garnished with cilantro and ENJOY!

  • The taste of this was great. However, my polenta never set up. It was runny. Next time I make this, I will use less water. - 4/9/11

  • Gave it whirl and my little family of three thought it was good. VERY easy to make with good flavor. I don't know that I'd do it agin without first trying another recipe but it satisfied my craving for mexican flavors. I did include the beans and the black olives will add chicken if I do again. - 3/14/11
