Carrot Puree

Introduction

Delicious side dish with scramble fried ground chicken (or turkey) and a sweet onion. Delicious side dish with scramble fried ground chicken (or turkey) and a sweet onion.
Number of Servings: 4

Ingredients

    3 carrots
    2 Tbs olive oil for roasting
    1 onion, diced
    1 celery rib, finely chopped
    2 garlic cloves, minced
    1 Tbs ginger root, peeled & minced (1/2" piece)
    2 c broth

Directions

1. Roast the carrots at 375F for 1 hour. Stir half way through.
2. Saute the remaining veggies. Add the carrots and broth. Simmer vigorously for 45 min, until the carrots are very soft.
3. Pure with a hand blender.
